A hanger steak, also known as butcher's steak, is a cut of beef steak prized for its flavor.  It is derived from the diaphragm of a steer.  You only get ONE hanger steak per steer, so this is considered a specialty cut...super tender and unique beefy flavor is in a class of it's own.  Weights are approximate.
