Osso Buco means "bone hole" in Italian and contains marrowbone, and is usually cooked or stewed in wine with vegetables and seasonings.  The marbled look yields the best finger-lickin', sticky, healthy collagen there is.  Customers who try Osso Buco make it part of their regular meal time repertoire.  Weights are approximate.
